Yes, unless they have the right in their contracts of employment to take bank holidays off (see question one). You must, however, give adequate notice - one day for each day that you require your employees to be available for work. In this case you would presumably want your employees to be available for the whole week (three days before the trade fair, and two days of trade fair), in which case you would have to tell them at least one week in advance.
